It’s that time of year when gifts often take the form of sweet things.
One of my favorite gluten free things is fudge and sometimes I like to mix it up by making a variety of chocolate and peanut butter fudge.
This gluten free vegan peanut butter fudge recipe is fast and easy to make, totally vegan, and gluten free.
Just incase Santa Claus is gluten-free or vegan or both, I wanted to share a treat that almost everyone can enjoy.
For this peanut butter fudge recipe, we’re going to be utilizing the double boiler to melt all of our ingredients, allowing all the ingredients to melt slowly without burning, so that our fudge is smooth, rich and creamy.
For this recipe, you’ll need:

  • 1/3 cup natural peanut butter (creamy or chunky)
  • 1/4 refined coconut oil
  • 1/2 cup pure maple syrup
  • 2 tsp. vanilla extract
  • 1/4 tsp sea salt
  • chopped roasted salted peanuts (optional garnish).

Start with a pot of boiling water.   Once the liquid has come to a steam,  place a large heat resistant glass bowl on the pot, such as pyrex.   This will help heat the mixture.
In the glass bowl,  place all of the ingredients and carefully mix to blend. Because of the coconut butter in this recipe the fudge will soften if it’s left out of the refrigerator at room temperature. Adding a little bit of powdered sugar added to the recipe can help, but its not necessary if you just keep the fudge cool.    With a heat resistant spoon, mix the ingredients until the mixture is a nice smooth consistency and then remove from the heat.
Next line a loaf pan or  a small glass roasting dish with plastic wrap. Pour the fudge mixture on top of the plastic wrap and smooth it out. Make sure it’s evenly dispersed and tap the pan on the counter to remove any air bubbles.
While still soft, sprinkle the optional chopped peanuts over the top.  Or a few chocolate chips if desired.
Transfer to the fridge for about 3 to 4 hours. Once removed it should be solidified altogether. Now you can use a knife to cut your block of fudge into mini squares. Remember to keep these chilled or in the freezer.
This is one delicious holiday treat at merely 20 to 30 calories a piece.
