Italian Pizzelle Cookie Recipe
John Irvin of Gluten Free Things shows his audience how to whip together one of his favorite recipes for delicate and crispy gluten-free vegan pizzelle cookies. He’s using proprietary Gluten Free Things brand premium waffle and pancake mix for exceptional flavor and texture of the final product.
Pizzelle cookies are a traditional crispy cookie wafer enjoyed by Italians, especially during the holiday season.
Recipe for Gluten Free Vegan Pizzelle Cookies
- 1/2 Cup of Gluten Free Things Waffle and Pancake Mix
- 1/3 Cup Silk Almond Milk (or your favorite vegan milk)
- 1 Tsp. Vanilla (John uses Nelson Macey Brand).
- 1 Tsp Anise Seed and extra 1 Tsp Anise powder.
- 2 TB melted coconut oil, cooled.
Preheat your pizzelle cookie griddle.
Add all ingredients in your dedicated gluten-free bowl and whisk the mixture to a batter consistency of crepes. If the batter seems thick, add another tablespoon of your almond milk until a slightly thinner consistency is achieved.
Spray your pizzelle cookie griddle with Pam Saute Grill cooking spray.
Add one Tablespoon of batter to each pizzelle cookie slots. John is using a two-cookie pizzelle griddle in the above video.
Lower the top and set your timer for 45 seconds.
Remove the Pizzelle Cookies with a utensil and place on parchment paper.
